Let’s Eat! Gluten Free Crockpot Roast

Truth be told, this one is being featured because the store ran roast on sale. No lie. I am cheap when it comes to cooking. Especially when it’s gluten free. So, chuck roasts were on sale for $1.48 a pound. I bought 3 and froze 2. This recipe is fairly simple. I do recommend using fresh veggies, for one reason only: cook time. This slow cooker recipe cooks on low for 8 hours. If you want anything more than mush from your veggies, you are going to want to do fresh, because they hold together better. If you are flash cooking this on high, go for it an use frozen or canned, just add them half way through instead of all at once. In the long run, you will be happy you did.
